Default 99 V6 will not take gas - intermittent

After 2 mechanics have given me my car back due to being unable to reproduce the problem, I decided my only chance was to find someone who has experienced it before. Here is my issue:

When I am driving, the car will drive fine for X miles (ranging from 20 to 500) then suddenly it stops taking the gas. It even seems that it stalls when the pedal is depressed. Like its choking the motor.
I am pretty sure the problem is electrical because once it starts I can press the clutch in, cut it off and then restart it, and it immediately takes the gas again, momentarily, and then stalls out again. This on/off process can be repeated as much as I want, but its very hard on the motor bc I have to rev it really high while its taking gas in order to get anywhere. Sometimes it happens 2 days in a row, other times it'll last for a month. An overnight cooldown always seems to resolve the problem, and then it comes back without warning.

I am unsure of any codes the previous mechanics have pulled from it if any...I obviously haven't done all I could research, but I was hoping someone had an idea before I take to a dealership, which I am beginning to think is my only hope and is quite scary...

You realize you posted in the wrong forum? This is the 3rd gen forum. A 99 is a 4th gen.

I didn't realize that. Not sure how I managed that.
