305-312? Are you sure you're not talking about an overbore instead of a stroke? I'd have to do the math, but somewhere in the neighborhood of an .060 overbore (which is really pushing the block to it's limits) will get you there with no stroking.
And whether to build up the 305 or 350 depends on what you're after. If you're looking for the power of a 350, then go with the 350. Changing the 305 to a 312 isn't going to make a tire sizzling difference, unless you put other performance parts into the build.

you can build a strong 350 with a stock bottom end, put a decent set of heads on it, .400 lift cam approx. and a performer rpm intake with a 650 holley, if your worried about emissions just find a crooked inspection mechanic or disconnect the odometer and keep it under 5,000. this is why i love being an inspection mechanic!!!
