My interior is a little of both.
Both stock and custom. Partially from need and partially because I wanted something different.
The needed change was in the backseat area where my rollcage penetrates into the trunk, so the seatbacks either needed to go away, or get modified. Since all the kids are on their own, we only needed two seats, so the decision was to eliminate the backseat, and keep the 4 pt. rollbar.
I paneled the entire back, and covered the hardboard panels with black wool felt carpeting. I made it removeable and also made the area where the seat bottoms used to be into storage bins. That way we can conceal valuables when we're at a cruise-in or away from the car.

The door panels are repops of factory 1971 Camaro, but I didn't like the full length armrests, so I rebuilt some armrests from a 1966 Chevelle, and filled in the front where the door handle cutout was with a wood block and body filler. Then I painted them gloss black and recovered in black naugahyde.

My front seats are stock frames, but when my friend built the new covers I had him do the center sections in diamond pattern, instead of the stock 2" pleats. No pictures now, as it's in for paint.
The rest the interior carpet, dash, etc. is stock, but I'm toying with a change to that later. Not sure what yet, but maybe a different dash insert, or maybe even a whole new dash.
