It would be a long ways, but...
Darn, if you lived in the Pacific Northwest, I could give you the name of a GREAT shop, but it’s probably not worth moving here just to get your classic restored. Although I have to say, there are a whole host of reasons why this is a pretty good place to live… If you want to get a feel for a group that can do the right thing by a car that started out in pretty bad shape, check out the ‘Ricky Camaro Rebirth’ thread in the 1st Gen Projects area. These are the kind of guys you want working on your treasure. Best of luck finding that kind of shop. Get references!!!

If its a well known trusted shop with a bunch of references you can just ship it. Heck whats another $1,000 for a restoration. This is a very common practice with the high end car show crowd. There are only a few well know guys in the country. ALso shipping a car to a place with lower costs can save you money. Having a car done in a area with a lower cost of living does not mean poor craftsmanship. There are urban areas that need $150-180/per hour just to keep the lights on and there are rural areas that would be good with $80.
Most shops can give you live video updates. You do want to pick it up in person and maybe 1 or 2 in person inspections if its a higher end restore.
