Default cooling and oil question

I am very new to the camaro world. I just purchased a 1968 RS with a 350/350 crate motor and L79 cam with a 4speed. I have two questions I have been looking and can't find a good answer what oil should I use? Second question the water temp is running about 180 when moving and starts climbing as soon as I stop. What is needed to correct this problem? I'm thinking about installing a electric fan.

You'll probably get a few personal preferences about the oil. But I prefer to use 10w40 in a summer car.
Is your fan shroud on? Going without one can make the engine run hot in traffic. I do like having an electric fan though.
The engine rarely ever gets to 190 in the heat of the summer, and on the open road I switch the fan off.

You could also check to see what thermostat you have in that engine. Might have one that allows it to run hotter than others. I run Penzoil 10w40 as well in my stock DZ302. Good luck!

I use Shell Rotella Diesel oil 15-40, works great, and you can use diesel oil without problems, as far as your cooling, like said above get a good twin fan elec setup and you will be a happy man.
