Default Cooling issue

Hey guys I have a 1980 z28 camaro. Power plant is a 377cid chevy it's a full out race motor. My question is my car has never ran above 180 on the street mainly around 150 to 160 crusing. Today the car wanted to run around 200 crusing and if I got on the throttle temp would go up to 210. It has a big aluminium rad and electric water pump. I did put new plugs in, they are a differt type and normly gap them at 49 but this time I gaped them at 40. I can't seem to figure this out. Any help would be nice. Oh also it has no thermostat either

If theres no therm, it could be airbound. Take the rad. cap off and start the car and let it run for a little bit and while its running, squeeze the top rad hose a few times to get the air out. Watch the hole for the rad. cap and you should see it start to circulate. Squeeze the hose again if you can to make sure the air is out but when it starts to flow out of the cap hole, just put the cap back on and see if that works or not.Just a thought.
