In my experience, K&N filters do nothing for power. Tested this out on the strip and the car, 94 bone stock Z28, ran pactically the same with either filter, and no filter.The main thing is to have a clean filter, regardless of brand. What helped is fixing the restrictive air plumbing between the throttle body and the air filter. As JD stated, the MAF sensor is plenty big enough for up to 400HP, and a bigger one won't do much except lightening your wallet.

With a modern free flowing cat sized big enough for the power you are producing, gutting the cat will produce very little additional power. Cats were very restrictive when they first csme out, but things have changed a lot in the last 20 years, but old stories die hard. Removing restrictions in the exhaust plumbing will help more than gutting the cat. That is why cat back systems are so popular.
