If I pay or am getting paid for a high quality detail every part should be cleaned/shined, even parts you don't normally see. Door jams, inside the gas door, under the dash, air vents spotless, anywhere water can set should be wiped like under t-tops, etc... A good detail job should take roughly 2-4 hours depending on the vehicle.
