Driving, it'll stay between 160-200. If I'm sitting somewhere idling for about 5-10min it'll go up to 210 and a little over. Once I start driving it'll drop slowly back down to 160-200 where it was before. Never kept it idling that long to see if it goes to 260.

Cost no more than $12 very easy to Change. Honestly I think your car is running fine. Try and and let it idle longer and see if it moves any further. Maybe a flush with a new stat should do the trick. You might have answered this b4 but does your fans kick on at 210?

Make sure you get the new T-stat at 195°. Running a lower stat will not help this engine, it will only give you problems with your fuel mix and the computer may complain about not being able to reach operating temp. Also make sure to purge the air out of the water outlet as trapped air will cause low water flow and overheating.

Hello, wouldn't a sticky Stat cause overheating all the time? And what is an air dam anyhow I cant get a straight answer on google

Yes, if the stat is sticking closed, it would run hotter all the time.
The air dam hangs down under the front of the car, set back from the nose. It looks like a spoiler, and it scoops the air and directs it up and through the radiator while open road driving.
Without it, you run hot on the road, but it doesn't affect idling temperatures.

Well I do see my air damn and it's still In tacked, but like I said my car doesn't overheat on the city streets only on the highway so it could stil be my stat n not overheat on the street?

Another possibility is if the stat is stuck open, but once the coolant stays at 195 and above (assuming that's what stat you have), the stat will remain open. If you've never changed the stat before, might as well. At least then you know what you're playing with, whether or not that's the culprit.
