If you're going for pure noise, why don't you just run open headers?

well i want the exhaust to run somewhere, i was thinking 3" true duel pipes straight out the back, or get some custom side exit done.

Side exit would look way too redneck and it doesn't fit the car in my opinion. If you want to run 3" true duals you're going to be best off dumping them before the rear axel. If you want something that goes out the back you should go for a Y-pipe and a good cat-back. True duals out the back (especially 3" all the way) is going to be hard, if not impossible, to get over the rear axel.

what about, just cutting the cats and muffler off, as they are now and replacing with straight pipe

I do not know what a stocker sounds like, but my pipes are completely stock except for a muffler delete and it sounds mean, really mean.
