Unless you hooked up a scan tool you still don't really know anything. New parts are defective way more then you think. Back when I was a GM tech many of the car I got sent from other garages that were "problems" were only problems because people replaced parts and assumed the new part was ok. Also keep in mind every time you change a sensor there is a chance to damage the connector, In a car the is 25 years old this is much more common. You need to beg, borrow or steal a scanner. A good tech with a good scanner could track this issue down in no time.
After saying all that, before I hooked up the scope I would be tempted to use a thermos gun on the exhaust manifold to see if one of exhaust outlets is cooler then the rest after the engine started missing for a minute or two. This could be a sticking valve or a sticking open injector. Both of which can stick when hot.

I do have a scan tool but I dont have a clue what I'm looking for in diagnostic mode. It's and otc scanner it's old but was good in its day. I was planning on testing fuel pressure till I discovered my pressure tester is seized up. I ordered another one but be a few days now.

I have used the old OTC scanner, Things like throttle position or O2 inputs require a little knowledge but things like Air temp and coolant temp can be read is F or C. You need to get it into live data and you can scroll through the sensors while the car is running. FYI the is a really good scanners. It was common for dealers to have a few of those around, We saved getting the GM CAMs system out for the problem cars. 90% of the computer work I did was on a OTC scanner. That was a long time ago. I would not mind having a brain master 2. Would be prefect for working on my 93.

Sorry been busy and haven't had the time to mess with it. Today I hooked up the fuel pressure gauge and I'm only at 30psi without the car running and the pressure is slowly bleeding off. But running with the vaccum to the fpr unhooked it's at 40psi and it's supposed to be 41 from what I understand so I guess everything is good.

I ordered a hypertech coil see if that changes anything. I'm running out of guesses at this point. Just so weird that the warmer its the worse it is. It will actually get bad enough to die and not restart until it cools back down.
