Angry Car Dies Random without accelerating & on Turns

Hey guys, I just purchased an 89 Chevy Camero V8 5.0 and have had a number of problems already.

1st - its had an overheating problem out of nowhere so I replaced Thermostat and it seemed to fix the problem except for it will randomly heat up and then drop back down to normal temp out of know where. But doesn't die, doesn't bubble, doesn't turn the car off or anything.

2nd - The car will randomly shut up, either right when i start it, or if im not accelerating going straight and whenever i make a left turn, sometimes right. As long as I have my foot on the gas a little, it wont die, but otherwise it randomly shuts off, then will start back up. Battery Voltage levels on the Dash will go from half way down to almost nothing and go back up. Never have owned a Camero.

plugs, wires, cap, rotor, fuel filter and see if it improves

Also, I still have an 89 factory service manual and a haynes manua:l $35 for both and includes shipping. They are invaluable

Does the engine start right up (when it starts), or do you have to crank it for a bit?
When you turn the key on, not start, can you hear the fuel pump prime for a few seconds, then turn off?

I can hear the fuel pump prime, and it starts right up with no issues. Now it dies suddenly unless I have my foot on the gas. Before it would at least idle, now even if I'm driving down the street it dies as soon as I let off the gas pedal.

The voltmeter going to zero could indicate a bad wiring/cable connection, or a wire/cable shorting out. No voltage at battery = no spark at plugs, unless you are using a magneto system. Start by checking the battery and ground connections.
