I had a shop do the 6 cylinder to v8 swap for me, which also included going from throttle body to an edelbrock 600 carb. they dropped the gas tank and pulled out the electric fuel delivery, and i went with the standard mechanical delivery. the engine seems to load up when it is warmed up, and i have to feather the gas pedal. the carb is new and has been professionally tuned a few times, but same results. also, my tail pipes have been getting pretty sooty. there is low mileage on this engine.
could this be the heads(fuely heads), piston rings, or i was wondering if possably to much fuel pressure? , and if i should get an inline fuel pressure gauge, and regulator installed., any help would be great, thankyou

What size V8?
With a mechanical fuel pump, you shouldn't need a pressure regulator.
If too much pressure was an issue, fuel would be getting pushed past the needle and seat, and your carb would be overflowing. Is it a gusher?
When you are standing in back of the car with the engine running, does the exhaust make your eyes burn? If so, it's running way too rich.
Has the carb been checked to see if the choke is opening up all the way, and to make sure the choke butterfly isn't closing on it's own when you give it some throttle. The choke wind-up spring adjustment could be set too low.
And I gotta ask...don't the (professional) guys who put the engine in know what to look for?
