What are the best intake and carb set up
 
I have an '81 that i took the 350 and made a 383 stroker, it has 16cc inverted pistons, and a cam Dur. of 212 and a lift of 440. But i seem to find a intake and carb set that will work with this set up. Right now I have a 600cfm Holley

You'll get a lot of different opinions on this and there's a wide variety of different set ups that would work well.
What is your plan for the car? just a nice daily driver? driver with some drag strip or street race action?
Looking for best performance or best gas mileage?
I'm a bit of a lead foot and always liked the even bore Holley 750 double pumpers and a single plane intake but a good street compromise on the car is a spread bore double pumper like the 650 and a spredbore dual plane intake.
If you are just looking for a nice daily driver with decent performance the Edlebrock performer intake and carb set up runs good or just use the Performer spreadbore intake and a GM Quadrajet.

This is just my opinion
If you want mosty race (high RPMs) and don't care much about streetability then i would look at a Victor Jr with a Demon carb 800 CFM min.

If you want to hit a lot of cruises I would go with RPM Air-gap with a Holly Avenger 780 (or around there CFM).

Course a well tuned custom fuel injection system can give you best of both worlds assuming the motor is not too radical.

I'm mostly using the car to cruise around town and if some punk kid in his daddy's thinks he can take me, I want to be able to show him that it's no joke. So does that help some what with what kind of carb I should run.

How much hood clearance do you have? Or, do you own a sawzall?? ;)

I have a stock hood at the monent but I'm not sure if I want to put a 4" crawl inducting hood on it or not, and I really don't want to be cutting up a great looking hood that has been on the car since it came off the factor line.
