Really high oil pressure after oil change

With water, having a low viscosity, yes, table, floor, and shoes will get wet.
The glass of water has an open to the atmosphere.
Air can enter the top of the inverted glass.

Sensor on an engine, the opening is in an oil filled volume and the release of pressure is through the oil pump and the bearing clearances.
Air has a long way to travel before it gets to the sensor as the viscosity of oil is thick/heavy.

Can you support this with any documentation From an OEM or a manual? If what you are saying is true and it can cause a bad oil pressure reading it should be in every factory manual.

This tip won't be in a manual.
When sensor is installed upright, air never escapes and becomes dead-headed.
Air is compressible and slow gauge action happens.
Fill the void and have a faster acting gauge, or indication signal to the gauge.
The gauge construction itself will determine the speed of reaction.
less air, the more an electrical reacts like a mechanical gauge.

However, each person to their own ways.

Craby, wiring checked out good, connector on the sensor had a small bit of oil in it though.

oil coming from the sensor seems to be common with it failing. dont be surprised if it starts leaking more
